In a standard non ppr I have the following three undrafted players available from last year:

Percy Harvin

Michael Crabtree

Toby Gerhart

I can keep 2 and give up my 16th and 17th round picks. Which would be my best option?

This is a great question. You keep Gerhart even though he is on a bad team because he will get the rock and the goal line carries. Great value for a starting Rb in the 16th or 17th round.

Harvin and Crabtree is another question. Everyone will jump on Harvin, but Crabtree is on a team that will always run-first. But he is without a doubt who Colin looks to in the clutch. Just remember, that two years ago he was a top # 14 WR in fantasy in standard systems.

Both have bigtime injury issues. If Harvin is going to return kicks and you get yardage points for that, then you have to grab him over Crabtree. I have them both very closely rated, by to me Harvin gets him by a nose. But not by much.

Harvin has the ability to take over a game if healthy. Crabtree does not.

Toby is consensus, leaning towards James' take on the WR's.

“I am hosting one league on NFL.com as well. Personally I thing there projections are way out of sync and have been less than reliable. I completely ignored them all year and instead took input from the LA at FFS which has proven to be much more accurate”. (Hooked 5 year Member)
